Green beans with Potatoes

Serves a family of 4 (2 adults and 2 kids)

Method:

1.In a kardhai (WOK) add 1 tablespoon oil. Once hot add the ginger paste and sauté for 1-2 minutes.

2.Add the chopped beans and sauté for 5-7 minutes.

3.Then add the chopped potatoes.

4.Mix them well and cover with the lid to cook them for 10-15 minutes on slow flame. The veggies will slightly become soft and add the seasonings along with grated tomatoes.

5.Give a good stir and let it cook for the next 10-15 minutes till the veggies are done.

Enjoy with dal and Rice / Roti !

Variation: Instead of potatoes , can also add scrambled eggs to the sauté beans with the same seasonings. It’s an extra boost of animal protein to the fibre and plant based protein rich beans.

Ingredients:
Green Beans 1 Packet (chopped diagonally or coarsely)
Medium Potatoes 2 (chopped cube size pieces)
Grated Tomato 1Big Size or 2 Medium Size
Ginger paste 2 Teaspoon
Turmeric Powder 1/4 Teaspoon
Coriander powder 2 Teaspoon
Red Chilly Powder To Taste
Salt ½ teaspoon
Oil 1 Tablespoon
