Green Capsicum with Potatoes

Serves a family of 4 (2 adults and 2 kids)

Method:

1.Add oil in a kadhai.Once hot add the long, thick potatoes slices and cook them till they turn light brown in color.

2.Remove them and in the remaining oil add the capsicum slices.

3.Sauté on medium – high flame for 7-8 minutes. Once their color changes, add the seasonings and sauté for  few minutes.

4.The capsicum should retain its crunchy texture.

5.Add the tomato ketchup and give a mix. Enjoy with roti or like a wrap!

Variation:

This veggie can also be made with paneer cubes (cottage cheese). Cook the capsicum in the similar way but add the cottage cheese cubes in the end and eat like a kathi roll!

Ingredients:

Capsicum4 pieces cut in thick long slices
Onion½ cup cut in thin Slices
Potatoes2 Big Size cut in long thick slices
Oil1 Tablespoon
Salt½ teaspoon
Coriander PowderTo Taste
Red Chilly PowderTo taste
Tomato Ketchup1 Tablespoon
